On December 18th, J Hotel Shanghai Tower hosted an exclusive winter menu tasting at Jin Yan, its signature Chinese restaurant, inviting esteemed media guests to savor an exquisite winter culinary journey. Embracing the Eastern philosophy of dining in harmony with the seasons, the culinary team delves into winter’s offerings, meticulously selecting nourishing seasonal ingredients. With artisanal skill, they reinterpret the subtle richness of the season. From soothing broths to robust main courses, each creation is designed to provide holistic comfort. The new winter menu will be available across the hotel’s restaurants starting December 21st, extending an invitation to guests to savor winter's most heartfelt offerings.
101F – Centouno
Centouno, with its sweeping floor-to-ceiling windows and dynamic open kitchen, presents a theatrical fine-dining experience suspended above the metropolis. Guided by the seasons, the creative chefs have crafted a contemporary Italian winter menu that showcases premium local ingredients—a genuine yet surprising gustatory voyage in the sky. The Seafood Buffet Dinner evolves with the seasons, bringing together the richness of seafood and the savor of prime meats in an elegant, relaxed setting. Indulge in freshly shucked oysters, Roasted Baby Chicken, and a delightful selection of Mediterranean-inspired dishes. The Mixed Seafood Paccheri features perfectly al dente paccheri pasta, its hollow form expertly capturing a luxurious sauce slow-simmered with prawns, scallops, clams, tomatoes, and aromatic herbs. The Cured King Salmon utilizes supreme-quality salmon, lightly cured with a proprietary blend of spices to accentuate its inherent richness. Accompanied by a delicate fennel salad and a hint of caviar, it achieves a refined equilibrium. For dessert, the Chocolate Mousse and Profiterole offers a play of contrasting textures, elevated by a note of black tea cream and served with vanilla ice cream for a flawless finale.

This winter, the chefs present a new Cantonese menu rooted in the cuisine's nourishing principles, masterfully blending seasonal ingredients with impeccable technique to evoke warmth through layered flavors. The Wok-fried Lobster with Beef Paste and Chili Sauce highlights the lobster's natural sweetness and firm texture, elevated by a nuanced, complex sauce. The Deep-Fried Pigeon Stuffed with Crab Roe and Bird's Nest artfully combines luxurious crab roe, delicate bird's nest, and aromatic pigeon—slow-cooked using traditional methods to achieve crisp skin and succulent meat, a true testament to winter's restorative essence.

Drawing upon the cuisine's refined heritage and seasonal abundance, the chef presents a new menu that captures the very soul of winter. The Double-Boiled Fish Maw Soup with Dried Tangerine Peel and Chinese Artichoke is patiently simmered to a clear, amber perfection. The warmth of the peel complements the fish maw's luxurious texture, while preserved vegetables add a delicate counterpoint. The Steamed Yellow Croaker with Preserved Pork, Sausage and Bamboo Shoot features succulent winter yellow croaker paired with crisp seasonal bamboo shoots. The Deep-Fried Sea Cucumber with Quinoa and Chinese Rice Wine Sauce delights with a silky, yielding texture.
